  • 90 min decant before first sips. Granny Smith green apples — bruised (Maddy gets baked apple pie) — permeate the initial nose. On a deeper whiff, the layering begins its reveal. Intertwined wet rocks, butterscotch, salinity, and lemon custard play together, nicely. On the palate, textural feel highlighted by a mouth coating presence. Selosse does what few others in Champagne can pull off (NYE)

    Quite an amazing pairing with Korean Fried Chicken -- normally, champagne tends to feel a bit dry in the finish, but the dosage certainly solves that problem. Makes the wine feel more fresh.

    Otherwise, I think this is a great dessert wine and should be thought of as such. On its own, the sweetness does get a bit overbearing especially if you have more than a few sips. It's quite vinous with great fruit clarity and expression, and I really enjoyed how delicate the bubbles were without being super fine, perhaps due to the viscosity of the champagne.

    It might be too way too much to open the night with, but it is a great wine to close the night with. Thanks for sharing XY!

  • Disgorged 2009. Very mature and quite different from the dry Champagnes I usually drink. It was full of life and lots of different fruit tastes as well as other aromas. But the unusual part was the high dosage. A weak but persistent mousse persisted and the color was "only" straw yellow. It had a long aftertaste and was very complex. A treat to try but not my favourite style.

  • 2017 Chassange Montrachet Rouge Blind: Pronounced nose with notes of yeasty, brioche, sweet biscuit, distinct white chocolate, tropical fruits. Sweet but well balanced by the high acidity. 24g of dosage which is considered as Sec than Demi Sec which require 32g min. As compared, Cristal is only 8g, so those who like Brut nature, or extra brut will not like this.

  • dégorgée le 15 juin 2009 - lovely nose of marmalade. This was so soft, so elegant and beautiful. Some honey and brioche, toasty but elegant, not in-your-face kind. Later a little salted lemon, a hint of Chinese salted plums along with telltale minerals.

    (NV Jacques Selosse Exquise Sec) Really interesting stuff as this pulled up off its residual sugar magnificently. As someone who drinks Riesling a good amount I could definetly feel this wine and what is was going for. Had almost a weightless Donnhoff-like quality on the palate and the sugar had the textural effect of really thin icing that is ever so sweet. Something Sam Mason would create. Lovely stuff, very delicate and wears its sugar proudly and subtley.
