Light yellow; nearly the color of a barrel sample. It took nearly an hour for the reduction to blow off, but once it did, aromas of sea spray and lime were accompanied by a medium-bodied, intensely mineral wine loaded Granny Smith apples and lemons. The powerful mod-palate was accompanied by a very long finish with tremendous persistence and cut. A great wine in the making here -- the essence of Chablis! 95+.
Now, this was more like it! Opened as a second bottle and this one was miles fresher, more classic. Fabulous definition. Steely citrus fruits, chalk and oysters. Very long and fine. Bottles like this one have a long life ahead. But concerns about whether this or the first one are the norm.
Mid gold, green. Plenty of slightly tropical fruits, lemon, slightly honeyed. Fairly rich though. Quite evolved, full bodied. Good acidity behind it. Just a bit evolved, even slightly oxidative about this bottle. Still pretty pleasant though.
