Root Day - level bottom of neck. Cork sound but wine soaked almost to the top. Dark lemon in colour with a wonderful bouquet of nuts, citrus, chalk (?), mineral and caramel. On the palate it’s mouthfilling with little of the sherry aspect I expected - much more fruit forward (pear/apple) and with stunning acidity that cleanses the mouth. Long finish with citrus, sherry and now some toast and spice showing. Definite drink now.

My seventh and final bottle. I lucked out, no oxidation at all in this bottle. The wine is still evolving, and it was hard to discern the type of fruit flavours on show here: it was more about the creamy, pure, balanced texture of the wine. There were nutty notes, almost a la Burgundy, and even a touch of the Musar blanc type flavours too. Ready now - if you get a solid bottle - but it should last a little while yet too. Always an intriguing, singular wine (A-/A).

Vina Tondonia lunch at restaurant Maeve (Utrecht, NL): Already quite advanced, sherry, bee wax and honey notes. Good balance, a hint of cabbage that would keep me from cellaring it much longer. Medium finish
