Very nice wine. Dark center with lighter edge. Mature meat & peppery aroma, but quite pure fruit and balance right from the bottle. Acidity more apparent with 40 minutes of air which contributes to the wine's attractive leanness and food-friendly quality. Fine aged St Joseph. Drinking beautifully but I don't see it improving.

Dark ruby with solid edge. Still deep fruit with vibrant forward bouquet. Lovely syrah with very good balance and length. Minimal barnyard; fruit dominates. Doesn't drink like it's 20 years old.
Opened to sample and resealed 2 hours ahead. Paired with 1993 Chave Hermitage; surprisingly, the Hermitage was the 'winner' (the 1993 was a miserable vintage) - but a matter of taste.

(Vertical tasting of Domaine Chave St Joseph wines) The oldest Chave St Joseph of the night. Plenty of depth and subtlety; very alive and will hold for 2-3 years yet. Very nice wine shows what a well-aged St Joseph can be once it smooths out.

Feral, animal, earth, totally secondary. Oh so distinct from its Aussie and American cousins. And yet retained good body and depth. It paired perfectly with a gamey lamb and stuffed mushrooms - less well with a sweetly glazed duck confit. All in all a treat. Will seek out again.
