Well matured, reliable Pomerol. Cedar, toffee, caramel in the nose. Medium bodied, elegant, smooth, with sweet cherries, chocolate, plum and toast. Drink within the next 2 years.

Quite to my surprise, this developed to be a stunning wine. It shows the 2000 characteristics, with excellent balance and structure, velvety tannins and persisting fruit components. It is a highly perfumed wine, with floral as well as tertiary notes on nose and palate and it has this sweetness and easy drink of elegantly matured Pomerol. It has beautiful length and a fine, uninvading persistence, making it a marvelous food companion.
It actually is quite unique in Bordeaux, when Pomerol comes to this state of grace. And quite interestingly, these wine are initially often credited with a relatively short life span. But a lot of Pomerol wine actually outlive these expectations by far. I remember Vieu Certan just going on forever and this Bon Pasteur seems to follow the trajectory. I believe it has some 10 more years in the tank easy, so no hurry, looking forward to the rest of the case.

This has really stepped up a notch over the last 12 months, and it is in its perfect drinking window. It does still benefit from a couple of hours in the decanter. It is now really wearing it Pomerol identity on its sleeve, with a rich opulent fruit gum nose of red cherry, strawberry, and chocolate. The palate is silky, albeit with a little residual tannin, and the finish is well balanced, if on the shorter side.

Fully mature. Inviting nose with all the tertiary goodies (cedar, tobacco, toffee, mokka). Elegant, seducing well structured, with sweet mature cherries, chocolate, plum and subtle roast aromas. Drink within the next 2/3 years.
