Medium minus intensity aromas of honey, slight cream and butter, a little herbaceous underpin, slight sweet spice and a tiny little musty cellar note as well as a touch of wet stone. Medium plus intensity acidity, citrus notes are a little sharp, a touch of slightly drying textured but, a little savoury on the finish with a touch of butter and honey. Nice.

Coravin fun - Domaine de Chevalier; 2/23/2022-3/6/2022 (My place, Kent Street): From Coravin. Signs of weeping under the cork, fill is at base of neck. Medium minus intensity aromas of honey but also a little vegetal note over wet stone, green citrus; touch of lime and green capsicum. With time the mineral note grows and is joined by a little biscuit. In the mouth it has medium plus intensity acidity shot through with lime backed by cream, herbs and that minerality. Faded but still showing some life. Long. Okay.

Domaine de Chevalier Tasting (French Embassy): A real treat to taste, this was fascinating and unique. It has aged nicely but still shows life and vibrancy. Aromas of hay, honeycomb, dried orange peel, dusty library, hints of mushroom. Brisk acidity frames the wine nicely, and it still has these racy, pretty qualities. Dried citrus peel mixes with a complex host of woodsy, white tea, green olive, honeycomb, sea salt and mushroom notes. Wild but delicious flavors, and the balance is just lovely. Stoked to taste this at almost 40 years of age.

Domaine de Chevalier vertical with Olivier Bernard (Le Cafe Descartes at the French Embassy): Strong jalapeno and bell pepper, also spicy spices and slightly oxidized apple. I wish for a bit more fruit and richness. Interesting but not intriguing.
