  • Châine dinner at Bindille. Served with a healthy portion (ha) of foie gras. Great pairing. Cork was in dry condition and wine had to be run through a cheese cloth. Apricots, lemon caramel. The wine, unlike the Cos from the same vintage, was likely better 5 years ago. But it may depend on how bricked you like it.

  • A great wine and time to drink. Super concentrated with aromas of toffee, rasins and burnt sugar. Strong sweet palate of dried apricots, qumquat and over ripe mango yet still has a strong backbone of acidity to keep it fresh. The wine has a beautiful amber color and is slightly thick giving a wonderful full mouth feel. I wish I had more of this.
