Needed about 90 min of air. Bricking. Nose is dark cherry, plum, and a bit of game and stone. Turning to the palate, it’s a beautiful barrage of dark fruits, minerality, and a bit of spicy heat. Not a full or heavy wine, it is an 07 after all. But it has a fair amount of complexity that just makes this enjoyable - it’s drinks well.

Chevillon Survey (Brasserie Margeuax): 07 Horizontal. Best in the flight by a margin. Aromas of bright red berry, spice and toasted herb. Delicious on the palate with pure red cherry made complex by musk and spice. Youthful with upside.

Chevillon study (Chicago, IL): This was my favourite of the 2007 lineup. The nose is really lovely here, with an emphasis on dark cherry and a slight hint of plum. Very complex, with more richness and body overall, though in the context of all the wines, this is still relatively thin given the vintage. Of the 2007s, I felt that this had the most expressive fruit.

A slight brown edge. Sweetish strawberry nose , some caramel too. No overt oak on the palate, but the feeling of sugar or glycerine is apparent on the modestly concentrated palate. This is good and ready today.
