Needed a decant, it started with a sour light fruit note. With a lot of air 2 hours later it stared to really come around with a nose of roses and strawberries. On the palate it stared to mellow up. Tannins got finer and it was a lot more balanced on the palate. This was a beautiful wine and likely to only improve with more cellar time.

Burgundy Dinner with Friends (S.K.Y. Restaurant - Chicago IL): Open an hour before serving, this was still clearly reduced to start, then slowly emerged from its shell. Slowly. My last glass was 5+ hours after the bottle was opened, and was clearly the most enjoyable. While still not clearly Vosne styled (I'd have thought this Gevrey 1er if served blind), there is a lot of rich black fruit with dark chocolate, black pepper and a meaty finish. I won't approach another bottle for several more years, because I think this was good (89 points) when served, but much better (91+ points?) several hours later.

A nose of focused dark cherry with sweet edges and gnarly underbrush. Slightly tawny at the edges. Medium bodied, a bit sweet with a brooding core. Dark and contained. Interesting to try this over the next decade or so.

Peranakan food at Linda’s Table (Linda’s Table Private Dining): Impressions. Lovely aromas of primary fruits with tertiary notes with touch of chinese herbs. Palate had more herbal notes with good structure. Prefer the aroma more.
