Bright, sappy red fruit, earthy with warm spices. Flavors are well delineated. A fair amount of fine tannins present. Still a bit youngish, needs a few more years.

Drank with entrees at La Piquette in D.C. with friends - the pairing of the '09 Chevillon Cailles with La Piquette's veal chop was darn near perfect. This bottle seemed perhaps slight bigger/broader than recent bottles, but was drinking beautifully. I've been trying to decide whether it's time to open the first of my case of '09 Chevillon Vaucrains, perhaps side by side with the Cailles.

Burgundy Tasting (Restaurant Schweizer's, Stuttgart): Glass: Spiegelau Burgundy Clear, deep garnet color. Fine, elegant, deep and smoky nose. On the palate fine tannin, medium+ ripe acidity. Beautiful blood/iron notes, salt mineral notes mixed with a dense sweet fruit. Very nice texture and balance. Good length. 92-93

Vertical/Horizontal Tasting of Chevillon Nuits St. Georges Premier Crus (San Francisco): Ruby center. Ripe sweet berry fruit. Excellent amplitude and sap. Deep fruit mixed with anise and salinity. Very good buttressing acidity and round tannins, nicely layered texture, fine finish. Excellent potential and quite clearly the best of the 4 vintages of this cru.
When tasted the next day, even deeper darker register fruit, ground coffee, and more tannic. Better than I found it the first day.
