Wildman New Release Burgundy Tasting (Peninsula Hotel - Chicago IL): Barrel sample. Red berry aromas with a slightly floral start, along with some coffee. Sweet red and black cherry flavors with moderate density and power with fairly substantial tannins dominating the middle today. Good meaty spice emerges on finish. This will certainly need plenty of time in the cellar.
This was showing very well. Medium-dark in colour, the bouquet is packed with earthy black fruit flavours. On the palate it is rich and round with good focus and outstanding balance. The finish is long. On the night it was more impressive than the Chambertin, which says something.
