Mark Haisma Tasting (Magdalen Restaurant, London) (Magdalen, Tooley Street, London SE1): The most beautifully sweet, exotic spice scent you could hope for. And the palate delivers too; just delicious. Phenomenal depth. But it seems almost feral; constantly darting in different directions with new flavours emerging from nowhere then disappearing equally fast. Would love to try again in five years when its settled down (wishful thinking?). 2019+

Mark Haisma Tasting (Magdalen Restaurant, London): Plenty of evidence of age at first glance but you would not realise it from the powerful and expressive nose. A class apart from the Gevrey-Chambertin it followed.

Haisma & Ilan (Hotel le Home, Beaune): 100% new oak. From a patch above the wall right up under the woods. 100% stems. Again, dusty ruby, very light to almost watery at the rim. Denser, slightly meaty nose. Significantly more weight but opens up and seems quite airy. a slight dark, tarry element to the tannins and a touch of woodsmoke (later realised there was smoke blowing in through the window, so not sure about that last point!). ***(*)
