Elegant fine.bubble stream through a fairly deep salmon pink. Pretty powerful nose with lots of red fruit & especially strawberries. Very fine, elegant palate. Lovely balance. Huge elegance, notably so for a rosé.
Disgorged July, 2012. Another outstanding bottle. The fruits are subtle and in the raspberry, bitter red cherry spectrum. The acidity is very high and that paired well with the sushi I paired this with. The mousse was very good on this bottle as well. When I gave the chef a taste for him to try to pair it he said the flavor he found most was red apple skin and I can sense it too.
Opened upon arrival of dear friends. This is a brilliant sparkling wine, gorgeous mousse, beautifully strawberry and rhubarb flavors, coupled with tense apple. This is a stunning rose Champagne. DG 09/2012.

(NV Vilmart & Cie "Cuvée Rubis" Brut) ($89.00) The 9/10 disgorgement is sold out at the estate. The next one, which I didn’t taste, will be released in October ’11. (BTW, the vintage Rosé called Grand Cellier Rubis is astonishing in the 2000 vintage. As great a rosé as I’ve ever experienced.)
