  Eye: light golden color. Nose: apricots, honeysuckle, tropical fruit. Palate: crisp, good structure, slight residual sweetness, medium finish.

  On day 2 the sulfur is almost gone and the strong nose is now a whole lot better, displaying fresh and clean fruity, floral and minerally aromas. On the palate the flavor profile is much the same but above all the wine is incredibly acidic. There is good weight and stucture but not a great balance. The finish is aggressive as hell and thus the overall experience is far from enjoyable.
  
  On day 3 the nose has calmed down a bit and added a slight buttery element. Likewise the mouthfeel, while still acidic and tart, has mellowed down a bit and the wine has gained some balance. The finish is still hard but the wine is now in a place to be enjoyed or at least had with food. Not really without, though.
  
  I doubt this is ever going to be a very good wine, especially since I'm skeptical of how the wine will age under a screwcap, having tasted some older new world wines that have remained practically unchanged after a decade under stelvin. I would love to hear the winemaker's thoughts regarding this wine and its drinking window.
