WSET Level 4 Course - WSET School; 9/6/2014-5/23/2015 (WSET School, Bermondsey): Appearance: The wine is Clear with a Medium Lemon colour. Nose: The nose is Clean and Developing, showing Medium intensity primary aromas of green apple, pear, lemon, peach, mango, and tertiary aromas of hay, honey, cooked cabbage. Palate: The wine is Dry in the mouth with a High level of acidity. It has a Medium Level of alcohol (13.5%). It has Medium body and Medium(+) intensity primary flavours of mango, peach, lemon, green apple, pear and tertiary flavours of hay, honey. The finish is Medium. Overall: Good concentration of fruit and structure. Has quite a bit of complexity and good length. Conclusion: It is a Very Good quality wine. Can Drink Now but has Potential for Ageing. This has the fruit concentration and structure to improve with age. ; Premium-Priced(£21.49 )
Launceston Place (South Kensigton, London): I was struck by this wine's purity of flavor and its impressive acidity. Not overly floral, with clean white fruit notes and well integrated oak fully in stride with its fine minerality and slightly unctuous texture. A great example of balance and restraint in a Chenin Blanc.
The Wines of Florent Baumard (Domaine Wine Storage - Chicago, IL): This was the first real home run of the tasting. It had a beautiful nose of cherries, peaches, a hint of lychee, and some waxy lemons. The palate was rich and full with loads of tropical fruit, and florals. What distinguished this from the 2009 Papillon was its beautiful acidity. It gave it great balance. Florent commented that this is a more classic vintage of Papillon, and I certainly agree!
Tasting with Florent Baumard (Chicago, IL): Florent mentioned that this was a much more classic vintage of this wine, and I'm inclined to agree. This one is a fair bit racier than the '09, and I appreciate the acidity here. A nice herbal/green character shows through on the palate as well. This wine isn't just about richness, but is relatively fleet-footed. Love the freshness on this one.
