A private dinner (@ Home): Final bottle from a case. This one is more on the austere side than some of the previous bottles, pure and energetic, cool and coiled, lemon and rocks, hint of flowers, nutty evolution, good length with a hint of orange. It is what it is and it is good for what it is, but it also displays the limitations of a champagne without dosage. It will remain what it is and just get older. The interaction between wine and dosage is necessary for a long and complexing evolution. If the dosage is low enough, it does not detract from precision or purity. To perfectly judge the level of dosage, is part of the winemaker's magic. It is said that at Gimonnet they prefer the Fleuron to the Oenophile, precisely for this reason

Contrary to the bottle tasted in July 2015, this one is firmly on the austere and mineral side of the spectrum. Tightly wound, energetic, chalky, fresh as a daisy, crisp and citrussy, green herbs and the merest hint of nutty development. Holds up effortlessly over two days in the fridge. Lovely.

Compared to my seven previous tasting notes of this wine, this bottle displays a superior depth of flavour, a sweetness in the ripe citrus fruit (lemon, Grand Marnier) not encountered before, a delicious sense of roundness and completeness, not austere anymore, but without losing its freshness, tension and precision, or its firm mineral core. Stylish and attractive.

A private tasting and dinner at a friend's (Amsterdam): Tight and lemony, wonderfully mineral and fresh, aromatic herbs, very dry but not austere, bursting with chalky energy, good length. Drinking beautifully.
