    (Pierre Péters "Cuvée Spéciale" Les Chétillons Brut) ($119.00) The ’04, just disgorged for the first time, has marvelously incisive aromas, not as animal as the ’02, more lacy and filigree; the palate seemed minty and stern, but I was told it would receive a splish more dosage (yay!) to ameliorate its iron and nettle profile. Length it has in spades. The ’02, what can one say? It’s deeply vinous and a doughy unruly beast. I adore it, and am happy y’all snuggled up to this meaty little guy. If you own any of the ’00, it’s in its chicory, espresso and chocolate stage, and is insanely delicious.
