  Opened by Laurie Caslot after a very informative visit. We decended into the caves (they have over a hectare of caves that are an ancient limestone quarry) where it is 11°C/52°F and 90% humidity to find a bottle from our anniversary year, 1995. It was incredibly fresh and lively, showing no signs of oxidation/aldehydes or any excess age. If stored under the same conditions, this wine has 10+ more years ahead of it. She was gracious enough to send it home with us, but oxygen and French roads were not its friends. 92

  A haunting nose with notes of woodsmoke, pepper and char. Slightly reduced at first but really improved in the glass with wonderful flavors of baconfat, violets and spices. Lighter-bodied but actually gained weight as it opened. Crisp and fresh on the finish with a nice floral cut. Really interesting and inspiring juice and perfect with the Moroccan spiced duck at Rouge Tomate. Thank you Pascaline for pulling this beauty out of the cellar for me.
