Second and last bottle. Not as good as the first, unfortunately. We did not see the constant evolution in this bottle, which was stored, aerated, and decanted in the same manner as the last. Still a strong showing, though, with notes of woodsmoke, forest floor, subtle blue/violet flowers, and some crushed stone throughout. Structure was still well-balanced. Paired with 5-year cheddar and wheat crackers. This one was "very good," 88/100.

First bottle of two. Aerated into a decanter for about twenty minutes before the first glass. Presents as a deep ruby with bricking and a clear rim. There was some fine sediment in the last few mL. Nose had great clarity, was continually changing, and (at this stage) married primary and secondary characteristics very well. The most commonly occurring aromas were of woodsmoke, pine sawdust, blackberry juice, blue and purple flowers, forest floor, and tobacco. We also got the occasional whiff of barnyard, crushed stone, or herb (mint). On the palate, this wine felt very deep and full of dark fruit and earth on the attack, but this profile quickly fanned out into a more complex assemblage of wood/tobacco smoke, dark fruit (blackberry and black cherry), leather, and a mellow minerality on the midpalate. The midpalate is supported by mouth-filling, warm, soft tannins and medium acid. The mouthfeel is really outstanding. The finish is medium-length (probably the low point of this wine) and tastes of smooth tobacco smoke.
I see the word "pleasant" being tossed around in tasting notes below. I do agree with that, but at this stage of development it really might qualify as "elegant." There is something here for everyone, and this wine delivers a complex experience in a very graceful way. What's even better is that this wine has some time left to age! The fruit will probably fade in the next couple of years, but the structure should allow for interesting tertiary flavors to develop for some time. Great pairing with 5-year cheddar, but this would be fabulous with French cuisine.
"Excellent," 92/100. Hopefully our next bottle is on par with this one!

Pleasant, mellow, smooth wine. Flavors somewhat muted. Med to full bodied. Enjoyed drinking this and would like to try again.
