Cloudy beige gold. Tiny bubbles. Blousy nose of dried quince and mushroom. Palate like chewing dried quince and a Popsicle stick at the same time with some spice and flat menthol in the finish. Bites you back like a good wine from Le Sud-Ouest should. Verdict: delicious.

Definitely some cider like notes, unique. The crystalline material that had deposited near the cork and ended up as a sand-like substance in the wine was the main detractor. Refreshing, acidic, and if you aren't planning on champagne, quite nice.

Really interesting stuff. Definitely not pretending to be Champagne, this is cidery and yeasty, and yummy and festive at the same time.
