  Dark fruit amid stronger flavors of chocolate and eucalyptus. Smooth finish of moderate duration. Little sedimentation.

  Very smooth tannins and acidity that decreased with decanting time. The flavors consist of black peppercorns, ripe figs, chocolate, blueberries and mint. A wonderful wine that has improved with age.

  Drank over three nights. Initially dominated by disjointed fruit and wood. The finish had an unpleasant in taste of expresso compote or jam. On day 3 it finally integrated and and the finish smoothed out. I will wait several years on the next bottle.

  A lovely cabernet. Mocha and dark fruits on nose, continue to palate. Round and velvety mouthfeel. Paired wonderfully with Alle-Pia's Salami al Tartufo and Bianco Sottobosco cheese from Piedmont. The '08 Paratus was a gift from good friends, it is a wine that I would seek out.

  Pre-summer Wine Dinner at Bonda (Bonda Restaurant Fairfield CT): Similar to previous note. Drank at the end of the night and surprisingly went well with very little food on my plate. I would buy this again at the right price.
