This pours light straw in the glass. The nose is highly aromatic, initially opening on tremendous candied citrus fruit character eventually turning to lovely non-fruit mineral notes. The nose unfurls to show green and yellow jolly rancher, chamomile, saffron, white tea, apple blossom, chalk, oyster shell, and sea breeze. The palate is bone dry entering on bright lemon juice, with medium plus acid. The finish closes on a combination of tart lemon juice and chalky soil. This is quite lovely stuff, in fabulous condition. Aging nicely and still quite youthful. I'd love to try this again with another 10 years on it. A Chavignol classic, in no way resembling generic Sancerre.

Dull medium yellow. Exotic fruit and herbs on the nose. Medium weight. Tropical guava upfront followed by citrus peel, blistering acidity, and stone. More interesting than pleasurable tonight I'm afraid.

So [expletive deleted] good, but also a wine that makes me mad at myself for being smart enough to buy and lay this down, but not smart enough to grab a case. This has a beautiful patina of age, with lightly honeyed notes, touches of ginger, a ripe melon-like richness through the mid-palate, while still retaining brisk acidity and a strong undercurrent of slate-y minerality. The typical citrus and more green notes are there, but not necessarily in a way that you would associate with a typical and younger Sauvignon Blanc. There's something that keeps me drawing back to a hypothetical blend of an older dry riesling and a still Champagne. Perhaps that just a personal reference for older whites. A perfect balance of richness and acidity, complex and drinking with a vibrancy that seems younger than the date on the label. This was a great lesson in the age worthiness of lighter, high acid, white wines and the real value of wines that might not be regarded as collectors' pieces. Now I'm off to hunt down some current releases to revisit in 2031.
My last bottle; with the caveat that I probably drank my entire case too early, this is really showing nice maturity tonight. Still focused on the palate, with a ripe, honeyed note on the nose. Given the way this is drinking right now, I wouldn’t mind having another case for the next five years ;^)
