Esther's Birthday Dinner (Luke's Oyster Bar, Gemmil Road, Singapore): This was a nicely accomplished wine from a very reliable Western Australian producer. In many ways, it represented a very archetypal Margaret River Cabernet blend, with a nice nose of blackberries and cassis just shaded by the slightest green leafiness and a highlights of eucalyptus. The palate came across very clean, clear, even pure, with cool cassis and berry fruit flavours held in superb balanced by fine, ripe tannins and well-integrated acidity. A very smooth, polished wine. I thought it was a bit simple in its youth at first, but with some time, an interesting savoury component of meat, earth and peppery spice started emerging on the midpalate. The little minty eucalyptus notes snuck up at the finish again, but these were more in the way of an interesting highlight rather than overwhelming greenness. I rather enjoyed this, especially with a a nice steak done in a mustard and peppercorn sauce.
