My final bottle from a 6 pack. The last time I had a bottle was about 2 yrs ago. 75% Pinot Noir and 25% Chardonnay, spent 7 years on the fine lees prior to disgorgement This golden liquid is just brilliant tonight, showing toast points, lemon meringue, hazelnuts, lime zest, and cooking spice. The mousse is dissipating, but still lively on the palate, finishing with sautéed mushroom/umami notes, chalkiness, cooked green apple fruit, and sage. There is bright acidity to support all this complexity, which will allow this wine to drink well for another 5 yrs, conservatively. All my bottles have been lovely, I will search our more Goutorbe SC bottlings in the future.

Lunch at Triple Crown (Chicago, IL): This is actually pretty consistent with my note from 8 years ago. This is a really rich, broad champagne, with fruit that still feels a touch browning (though not in a bad way). Good acidity, but the freshness is starting to dial back. To be clear though, this isn't drinking advanced at all. Very nice with the food today.

so very, very good right now. right in the maturity sweet spot for me right now - showing some tropical/pineapple notes and a bit more color, but still quite vibrant. this is why you age bdb's! But I wouldn't hold another decade.

Penultimate bottle from 6 originally purchased. Last tasted 2 yrs ago. This bottle was singing today, enjoyed it on the beachfront porch, with a few salty hard pretzels. What a pairing! Notes of bread crust, pastry glaze, hazelnuts, lemon and lime, kiwi, and slate, with bright acidity and a long and earth-laden finish. Drink now through 2023+.
