Terry Thiese's new catalogue suggested trying the 2000's at this point so I tried this one. It had an impression of peaches and slate. It had deep flavors, but they were not clearly delineated, and a bit muddled. It seemed dull the first evening with dinner . Second night after resting recorked in the refrigerator, it was better. Flavors seemed more focused and sharper, and acid was a bit better. Not a great wine, but decent. Not the best example of Selbach-Oster, or of the vineyard. But it seems that this 2000 spatlese has a while to go before it comes into balance.
