Only time for a quick decanting. Still, I would say a bit closed at this point. But the violet, cherrry and earthy notes and flavours promise a great deal for this lovely, unpretentious wine. I will revisit in approx. a year.
We drink zee French vino (Chez Simo Bistro, Chicago IL): Nose: Gorgeous and perfumed with violets, earth notes, dark red fruits, red cherries, and some spice tones. The tones seem to waft out of the glass, and while there is a robustness to them, there is also balance and elegance as well.
Taste: Medium bodied with noticeable medium+ acidity and youthful tannins. The structure is certainly there along with violets, spice tones, dark red fruits, and some bits of earth notes.
Overall: This is very young and one of the best Auxey-Duresses I've had. This needs a lot of sleep, but there is a ton to like right now as well.
Dinner at Chez Simo (Chez Simo Bistro - Chicago, IL): Decanted for an hour before dinner. A great pairing with Chez Simo's mushroom ragout (Ragoût de Champignons, mélange of mushrooms, shallots with Madeira wine). The buttery richness of the ragout was cut nicely by the acidity of this delicious pinot. Great berry flavor, subtle earthiness, and some earthy notes gave this a lot of class. It was stupid that I drank all of my bottles already. What was I thinking?!??!?
