Enjoyed with the first three courses of the club's Mexican-themed supper club event- ceviche, poblano & corn salad and black bean soup. Deep golden yellow color with a soft mousse and bead, this appears as a mature glass of Champagne should. The bouquet shows apple, cashew butter, almond paste and something nutty, almost along the lines of browned butter. A nice orchard fruit flavor on the palate, with wet stone and bruised apple qualities. Interestingly, this gained a bit of freshness with air- something I've previously experienced with a bottle of Champagne. 87-89 pts.

Not bad, but almost a bit oxidized on opening with marzipan and almond notes. Improved with air, decent fruit and good acid with some minerality. 88 points

Better than the last bottle but still below what I would expect from this producer. Drier texture than I expect from a Brut which was 180 degrees from the last bottle which was sweet for a Brut. More pale than the last bottle. Notes of dough, limes and chalky minerals. Firm acidity. 87 points.
