Another Coravin mistake. Please decant and let this one breathe. I tasted it on Wed and Thurs. it was so acidic on Wednesday that I almost mistook it for a Pinot or perhaps a Grenache. Color was very light. I uncorked it and put it on a Coravin Pivot to let it air a bit. Tried it Thursday and it was better, but still very tight and acidic. Color had darkened. Revisited on Saturday and let the glass breathe for 20-30 mins. Dry as a bone at first, but eventually this is what I imagined the Aruajo Calistoga terroir to be. I can see how the first label is so sought after. Tasting notes from Saturday after 20-30 mins in glass: Earthy nose with graphite, black cherry, and stewed black fruit (with a Bordeaux-like funky, mineral smell - beautiful). Strawberry to black cherry (let’s just call it ripe raspberry) on the front palate, transitioning into plum/blueberry on the mid palate, with leather and tobacco. Short, clean finish. “May” develop more in the bottle and at the price point may be worth the risk. Otherwise, decant, decant, decant, and drink up.

Has been almost 4 years since our last tasting with very similar notes. Nice color in the bowl, this is still drinking well but will not get any better. I would drink any remaining bottles over the next one to two years, no benefit of going any longer. That said, the wine was better than the filet mignon it was paired with. Black fruits in the nose and flavor. Black cherries, black raspberries, black currants, plums, licorice and some earthiness. Medium to full bodied, nice complexity, well balanced and a smooth medium to long finish.

Fully mature and ready to drink. Paired with prime rib and some garlic mashed potato and it was great. Like the previous reviewer pointed out, might be turning the corner so drink up.

(Araujo Estate Altagracia) 72% Cabernet Sauvignon, 28% Merlot. Violet-garnet color, with a pink rim. Lush fruit jumps out on the nose—plum, bright cherry, and cranberry—followed by pomegranate and bramble. The palate adds a stony earthiness and fruity acidity, carried by soft, smooth tannins.
