A bit tight tasting. Not sure if that is just its nature or if it needs a bit more time. Deep red/purple color. A lot of pepper and spice aromas. Spice, cedar, black current flavors. Quite smooth for the amount of spice. Medium long finish. This probably would have gone better with a big, red meat dish.

Some Chilean wineries are really starting to dial down cabernet sauvignon. Much more reserved than you would expect, yet it still shows that minty and – dare I say it?– green-pepper note one associates with ripe cabernet sauvignon. Bravo to Santa Carolina for making a Cab with such high drinkability and elegance. Carafe one hour before serving. Serve at 18C. Food pairing idea: Lamb chops

pleasant, peppery, with flavors of plums and cherries and nice herbal notes of rosemary or cedar - not much finish, but nice enough
