Golden colour in the glass. There are evident oxidative elements on the nose in addition to its long biological aging - this Manzanilla is hinting at Amontillado there.
It is rich and waxy, coating nicely the mouth. Aromas of salted almonds, macadamia nuts, and orange peel. There is a delicious touch of red apples and apple skin as well, with just an elegant touch of oxidation: bit of buttery brioche and nuts. Very long lasting, fresh, complex and rich. Pretty much bone dry.

Marco de Jerez from TSA (La Salut, Redfern): Waxy, ripe citrus tends to orange, quite seaside and seaweed, a meaty underpin. Juicy, palate a reflection of the nose with that salted orange quality underpinned by a seaweed greenness. Hmm

12 años de edad media en soleras y criaderas.LA nariz es expresiva y voluminoso, con toques de camomila, frutos secos, recuerdos a brisa marina y algún toques de manzana madura y fruta escarchada. Muy rica en boca, de nuevo con cierta salinidad, muy sápida, con nervio, larga y con profundidad.

Manzanilla tasting: Buttery-creamy nose with soup stock, nuts. Taste not as rich and much drier than one expects from the nose. Woodsy, long oxidative taste.
