  • Food: Japanese Shabu Shabu @ Sessyu Hong Kong
    Duraation: 3 hours
Condition: Perfect, opened in bottle for 3 hours
    Aroma: blueberry, earthy
Notes: Dominique Laurent's style has always been rather consistent among his different cuvees or vintages, therefore his grand crus are typically very safe to have and it's difficult to go wrong. Many people argue that it doesn't surprise people, as much as I liked his Grands Echezeaux and Vosne Romanee 1er Crus, I have to agree that this bottle of Chambertin was good, but was not outstanding. I never had to worry about a rough palate on his wines as he's very good at creating wines with smooth palate without challenging your taste buds with big tannins or huge acidity, nevertheless what's missing in this particular wine is the level of depth that one of the greatest Grand Crus in Burgundy should offer. Quite a decent and nice drink, but I think I could find a better Dominique Laurent bottle in the same vintage. In terms of drinking window, I think this wine should be able to hold up for 6-8 more years without a major problem.
