Excellent ten year old traditional-style Chablis. It pours with hardly any color, surprising given its age. The nose also belies its age, with citrus/lemon, especially as the bottle warms from cellar temperature. First few sips give a full bodied but oaky impression. Coming back to the glass thirty minutes later reveals a different wine - the oak has entirely dissipated. The wine still seems young, with intense mouth-watering lemon/lime flavors and the back-end tartness of just-sliced grapefruit, both of which go on and on. On day two, the citrusy element is even more pronounced. This would be dynamite with ceviche or with cold shrimp with lime and herbs.

Has all the right elements of a decent chablis but falls short of grand cru status for me.
