Right upon opening, bright acidity. Medium, light body and light green-yellow color. Very nice with seafood. After a day the acidity drops a bit and a papaya undertone comes forward.

Dusky, lemon yellow color with citrus (lemon) in the nose. Some citrus with a lot of acidity. Was an excellent complement to shrimp and grits; it added nice flavors while accompanying the dish.

David Adelsheim Tasting (Waterford Wine Company): Citrus notes; melon; mineral. Fairly full mid palate considering the acidity. bright acid, lime zest, limeade. long finish. Tart, lemonhead candy. Bracing. Rich texture on the palate.

Staff Tasting (Waterford Wines Milwaukee): whites @ adelsheim never get any oak treatment. Go for extended skin maceration to get more weight and texture out of their whites. Ben suggested all of their whites taste of the same family. 60% of their production is white wine. aromatic mineral nose. shale and chalk. nice texture, something a little spicy. nice light creamy texture. tangy lemon citrus. high and tight mineral acidity. others suggested and almondness to the wine that i did not really find. after the bottle was open four two hours i was open to this suggestion, but can't back it. very nice wine for $18.
