Fraser McKinley appropriately termed this a yoghurt wine. It fizzed and crackled with all sorts of odd cultures, was a little bretty and smelt of cucumber and juniper berry. It was skinsy in the mouth with good intensity and finished with a big sprinkling of salt.

As good as fresh Aligoté gets I suppose. Lively with crisp citrusy notes and racy acidity. In my opinion it is best enjoyed with food at the moment as it mellows it somewhat. I had it with pan-fried pollock with butterbeans and some fried vegetables. Very nice!

So many bubbles in this wine almost like a pet nat in the beginning but after a decant it showed very well. Stony and lemony liquid gold. Great stuff.
