Wonderful, yesty bread dough nose, highlighted by hints of caramelized lemon and honey. At the moment, this wine is drinking beautifully; luscious, creamy and dense midpalate. Lemoncurd, grilled pine-apple and a hint of spicy/herbal seasonings. Just a nutty hint of eovlution present. Terrific bubble.

Champagne and Sushi (Nakamori): This champagne was definitely mineral and energy-driven. There was pear and lime. On a hot day, and a hot restaurant, this was downright refreshing and delightful.

This wine has the incredible grip of the 2008 vintage and the dryness of Muscadet. If there is RS here, I can’t appreciate it. I can see why it could work with sushi but any dish with fats, dairy or vegetable, are sliced cleanly with its razor sharp acidity. The highlight tonight was a mayo based dressing with a touch of salsa heat and cilantro on fresh tomatoes. Not classic but, oh well, delicious!

Off the wine list @ Castagna. It was the perfect wine for my dining companion based on name and vintage, but it's also just a great wine. I think of it as mostly minerals and spices. Reminded me just a touch of the Selosse we had last weekend in that it's not a typical champagne flavor profile. Changed quite a bit in the glass and appreciated the burgundy glasses that Castagna used. Very tasty.
