  • Drank at Acker's La Paulee dinner at Capital Seafood in LA. Bottle was in good shape, with no noticeable issues. No decant. Opened for about an hour to slow ox, and then poured. Initially noted some light barnyard notes on the nose, but decided to give it a taste anyway.

    The wine was a bit hard edged, but I could tell it had some good structure underneath. So the table decided we should give it some time to open up. After about an hour, I revisited, and found it to be quite a lot more pleasing, which encouraged me to give it more time. After another hour or so, this wine was really coming alive. The person next to me said it "was night and day", and I thought so too! We revisited this wine over the following 2 hours, and found it just kept improving! The entire table started raving about this wine, about this time as well!

    I found it paired best with the Peking Duck(which was excellent).

    So as final tasting notes I found the wine had some typical of older Red Burgundy beautiful earthiness aromas, followed by some dark cherry, and perhaps a little Christmas spice. The full bodied(but not overly heavy) mouthfeel had good weight, and was very smooth. The flavors started with some bright cherry, a hint of some ripe strawberry, currents, and plenty of spice to make it very interesting and dynamic. Out of 78 wines tasted at this event, (many are lifetime bucket list wines), the wine store owner next to be said this was "one of his favorite wines of the night"! I would agree!

    No rush to drink this wine, but please give it it's due respect of a lengthy decant, and the opportunity to show you all its got to offer!

  • Paulee wedding lunch at Nicolas.
    Really good. Showy and expressive. Outshone the rest of the Bonnes-Mares at the table.
    Appearance is clear, pale intensity, ruby colour. Legs.
    Nose pronounced intensity, with aromas of sweet florals, sandalwood, dirty earth sous bois, menthol. Developed.
    On the palate, dry, high acidity, medium alcohol (13.5%), medium tannins, medium+ body. Medium+ flavour intensity, with flavours of dark spices, rich red cherries, red plum, dark red cherries, dark herbs, menthol, earth, spices. Long finish.
    Excellent quality. So much substance and complexity wrapped in a neat package. Drink now.

  • 200 Burgundy Grand Crus from vintage 2000, 4-day blind tasting (Singapore): Feels ripe and a bit pushed, pine tree, lilly floral aromas as well, ruby color still, not oxy but bready, good mid palate volume.

  • Tasted blind. Expressive and complex nose around rich black and sour cherry, sweet spices, intermixed with tertiary notes. On the ripe side but stays just within the limits.

  • Double blind. This saw ~3 hours of air. Big, bold nose of earthy black cherry on the nose. Palate is meaty, black cherry with some mushroom and beef blood notes. Plenty of powerful structure remaining, but will the fruit last long enough? Upside if the fruit can hang on.
