Light, pale gold in color with a fine delicate & constant mousse. Full, fragrant & attractive nose of ripe fruit aromas of green apples, lemons/limes & pears with overtones of floral & yeasty/brioche notes, almonds, minerals & stony. Light bodied with a good concentration of well balanced & smooth textured yet zesty, ripe fruit flavors of green apples, Meyer lemons & pears with yeasty/bread, minerals & stony. Long lingering crisp finish. Drinks quite well at present although aging has added a bit of complexity since its initial release.

Taste: Medium bodied with medium+ acidity. The acidity is crisp and refreshing with white fruits, biscuits, baking spices, apples, and saline tones.
Overall: This is a very good Oregon Sparkling wine. It is well balanced with good depth, but it doesn't seem to kick into those extra gears or with the complexity of better non-Champagne sparkling wines.

Served in a double blind flight of three '09 bubblies. Attractive medium nose has good yeast/bread notes intermixed with sweeter fruit. Palate has medium body and good acids, but once again the thinner with lighter concentration than I prefer.

The Rotating Dinners, I.7: 2005 Bordeaux Blends (Chicago, IL): Served double blind. A bit austere and the most restrained of the three starter wines. There's a bit of a honeyed quality (without the sugar), or maybe a floral note to this wine. Not too deep and potent, and the acidity here wasn't what I'd expect in a champagne, but I did guess that this was made from champenois grapes.

Rotating Dinner Series- 2005 Blind Bordeaux Blends from around the world (The Bristol, Chicago IL): Nose: The nose is precise and aromatic with white fruits, biscuits, baking spices, apples, cinnamon spice, and some saline notes. This shows the Chardonnay quite well, but it lacks some depth.

Pale yellow color with plenty of fine bubbles. Bright and fresh with lemon, toast and caramel. Light on its feet and complex.
