Have had this in the cellar for years. Wonderfully matured chamoagne w. a golden colour and the classical notes of nuts and bruised apples which are followed by soy sauce, nori weed and dark bread. Retained acidity and creamy bubbles give a smooth mouthfeel w. bruised yellow fruits, preserved lemons, sweet liquorice and vegetable broth.

(NV Varnier-Fanniere Champagne Grand Cru Brut) Light yellow color with abundant, speedy, tiny bubbles; yeasty, oxidized apple nose; oxidized apple palate; medium finish
(NV Varnier-Fannière Grand Cru Cru Brut) ($63.00) Disgorged 12/10, 30% ’07 and 70% ’08, one-third each of Avize, Oger and Cramant. Dosage perfect. The wine is a rapture of apples, as incisive and articulate and charming and classy as this creature can be. It’s become my subjective favorite NV from the Côte des Blancs. The empty glass is an exegesis of chalk.

Bright green apple acidity and floral citruses lead to vibrant minerality on the finish.
This was served at the start of the meal, and it did get my appetite going. Good starter.
