PnP. Took about 20 min to open and now 45 min after opening. Aromas of mildly honeyed apples, flowers, and minerals. Tart applews w honey, minerals, herbs, and hint of flowers. Excellent acids on a medium bodied frame. Nice grapefruit pith bitterness. This is my first sylvaner >5 yr old. Evolving nicely.

Pale yellow. Open for 1 hr. A-Gala apples, mild tropical fruit w a high toned (>) band aid (in a good way). P-Apple, peaches, mango w minerals in midpalate. Beautiful acids. F-Nice melange of minerals, fruit, grapefruit pith. Nice weight. Still feels young. Really enjoyable.

Starting to tighten up compared to my last bottle, with sharper acidity and an even more serrated texture. Still brimming with freshness but the fruit flavors are more reticent.

Pale gold. Took >1hr to open up even on day 2. Just incredible seamless aromas of apples, lychees, stone fruits, hints of mint and eucalyptus aromas. Palate shows a bit riper fruit but with great underlying acidity. Minerals come in the mid-palate. Nice finish of layers of fruit, rocks, and herbs with a lingering finish of rocks.

Sports those trademark fresh, clean sylvaner scents right from the pop of the (glass) cork, all seaweedy and celerylike and it could pass for a scented spa product. On the palate the fruit is almost wincing in its youthful acidity at first but with a little more time to unwind and warm the acidity becomes more dynamic than that initial sharp spine; it has that grinding, gravelly mouthfeel like it's drilling through solid rock. The aromas become rockier as well and those initial greenery-type scents give way to something deeper and less fruit-derived.
