  • Loire white, the perfect occasion for a pairing experiment for my sommelier thesis that's due in a few months. This old vines Sancerre was a gift from great friends (thx, T&K!), and had the wonderful anise qualities of the parsley family of herbs that pair so well with smoked salmon, broccoli, fennel, celery & goat's cheese frittata. Clean aromas & flavours of lemon, lemon blossom, sour apples, delicate green herbs and a mineral touch. Pristine acidity, enough weight and a long, fresh finish!
