I have never had a 20 dollar bottle of GV. What a difference a few bucks and a year or two makes. I had this on Friday and it was good. I put the rest in the fridge and came back to it now on Monday. What a difference some time makes on this. It was good on friday, but over a couple of days it really developed some complexity. People are saying pea shoots, but as it develops I am carried back to my childhood on the farm with the hay fields with timothy grass instead of alfalfa which is pea shoot like. The timothy had a richer, more complex note of grassiness more mature and less green. While most GVs I've had are really up front in their freshness, this one has some nice complex notes that develop as you savor it. A chardonnay like richness but still retaining the minerality on the finish. Decant or let this sit a bit and you will be rewarded. I had this with grilled pork chops and snowpeas with grilled fresh young garlic bulbs. It held up really well. Then, the chocolate brownie was heaven. Has anyone ever had a decent wine that doesn't go well with chocolate?
