Given that all five of the last notes posted noted premox I decided to try one. A youthful light yellow color, beautiful bouquet of white fruits, chalk and limestone with hints of citrus. The texture was richer than most, good acidity, balance and weight. Over the next two hours the flavor profile moved from a taut expression of minerality and citrus to a richer, rounder wine with layers of silky fruit now woven in, nice finish. A beautiful chablis from start to finish. Based on this bottle, this 15 year old is in early maturity and should be delicious for the next 5+ years.
This bottle was clearly way past its peak. Sherry-like aromas at the start lifted a bit after a few minutes but liveliness never appeared. I'd say I was about five years behind the eight ball in this instance. With "Community Holdings" of 399 bottles "In Cellars," according to the sidebar, I'm in decent company.
