Still very good but definitely time to drink now. Classic Chablis flavors but a bit softer and richer now and with the faintest hint of that vegetal (spinach?) flavor I sometimes find in mature Chardonnays. Better with decant and at cellar temperature. We certainly enjoyed drinking it with dinner but I wouldn’t wait much longer.

Pale yellow. Reticent aromas of peach pit, stones, flint and sea salt. Fat, briney and dense with layers of ocean, oyster and a palate staining multi-minute finish. This is great Chablis.
