  • A great example of Washington cab, make sure to give this wine lots of air before drinking and take your time as it's fun to note the development of the flavors. Rich, spicy, floral nose (think a mild potpourri) with subdued fruit and oak. The attack is bold, like a one-two punch with the first hit subtle and smooth setting you up for the second punch which delivers flavors. Palette has blackberry and chocolate notes with lots of earth; good structure. Continues to smooth out the more it gets time in the glass. Finish is oakey and long. Paired this with a rich, spicy beef-laden chilli; a dangerous move perhaps but the wine held its own quite well. A great boutique wine from a great boutique winery. Pro tip: If you happen to be fortunate enough to find yourself in Washington State, take the schlep out to Red Mountain and get Mr. Cooper to pour you some himself; he's a great raconteur as well as wine maker.
