Rockss and Fruit

    (Jadot Chevalier-Montrachet) This was an odd wine. The nose was nice out of the glass with a honeyed aspect, some nice minerality and spice. But soon a slight hint of oxidation set in. It became much more apparent on the palate as the wine aerated. The palate was fat and opulent with some nice mineral notes. The acidity was very low. The finish was long. This wine did some strange things. The color got darker. The nose got really nice while the palate became more oxidized. Within 45 minutes the palate was pretty much shot. I have heard about Verget wines starting out super oxidized and dark and then lightening up and becoming much better. Never seen a wine just evolve downhill so quickly. Maybe a much older wine but never one this young. Also when a white burg is oxidized it usually is very apparent from the outset.
