Eclectic wine dinner at The Ledbury (The Ledbury, London): Decanted at 5.00pm and I tasted the dregs - nice, smooth, slightly sweet shiraz, amazingly youthful, but nothing special. Four and a half hours later it was unrecognisable - fecal, mouthfilling, and with a silky texture, this was a rude, complex wine, fantastically fresh

Dark, brown-red, but doesn't look particularly mature, tannin still present, but soft - all that seems to have changed over the past 20 years is that the acid has retreated - a plush, comforting wine, but it hasn't really gained complexity over the years
