Drank as a pairing with the world's fastest omakase (12 rolls in 30 mins). It surprised me a bit. This is much more evolved than I would have expected. A bit more caramelized sortof flavor. It's nice though. A bit nutty. Not sure how long it lasts given the way this bottle showed, but it was very enjoyable right now.

Appropriately this was drunk at Ambonnay in Portland. Delicious, toasty, lots of sweet fruit. This was in a great place but would really have benefited from a cooler serving temperature. Will hold my own bottles a few more years for additional development.

Next to the ‘12 and ‘07 Goulte, this was less impressive. Lacking a bit of complexity and rather unformed on finish. But still lovely, elegant champagne. Would drink over next few years I think.

A bit more muted compared to the nearly mature 07 and the powerhouse 12. Spicy and apples. More mature and lemony and acid. Nose - 5/6, Palate - 5/6, Finish - 4.5/6, Je ne Sais Quoi - 1/2 = 15.5/20.
