Just a phenomenal wine. Extremely closed at first, but opened up over the course of an hour to reveal notes of honey, ripe apples, acacia, and very balanced wood. Personally, I love Moreau wines and their style of Chablis - not the most austere, but delicious.

Ripe apple throughout, certainly very mature but the sheer density and concentration easily pull this through, assisted by enough supporting acidity. Not as bright as my previous bottle from this opened earlier this year.

Plenty of ripe apple with a very bright saline character on both nose and palate. So classically Chablis start-to-finish with impressive Grand Cru density. This may still have some upside as it develops some more earthy, caramel notes.

Drank in Chablis during dinner. Some aging flawours, but still rich and concentrated (comparing to other Chablis) but very pleasant and fresh. Gets better with air, at the end it was on a very excellent level.

Christian Moreau / Groffier Burgundy Dinner with Friends (RPM Steak - Chicago IL): Served alongside the 2007 Clos. This wine was riper and more powerful, but slightly less elegant. Lots of apple character here as well. Both bottles purchased upon release and well stored since.
