This bottles was served at 8 degrees celsius, in a Zalto Universal and drunk over 2 hours. Color was golden, nose overwhelming pear notes was very constant all through, never had that in Champagne ever , but here it was. Taste was soft and delicious with again pear(can´t mention which sort) and aftertaste was like eau-de-vie , we discussed this but it was there and fantastic. According to Antonio Galloni this is 15 clones of Pinot Noir(wow) and a very small plot, first vintage. The wine looks light gold colored. The legs are slow. There is no sediment in the bottle. It smells like pear. It tastes like pear and peach blossom. The body is light/medium. The wine has smooth texture. The wine finishes medium. The wine has medium acidity.

A glorious wine. The wine exhibited a light golden hue and offered up huge yeasty bouquet. On the palate it was yeasty and lively as it danced on the palate with fantastic complexity and elegance. It is a Champagne that mustn’t be confined to a Champagne, but rather a large quality wine glass so that one can experience the evolution of the wine as it evolves in the glass

Another terrific Cedric Bouchard Champagne. Vibrant with gorgeous Pinot Noir fruit. Enjoyed with smoked salmon, caviar and latkes.
