As we spend our stay-at-home time searching the less-visited corners of our cellar, this wine was fine with our Saturday lunch of a meatapalooza chopped salad. Having experience with Pedro Ximenez wine for decades, I am inclined to agree with TCOSGRIFF that this is probably Pedro Jimenéz (or Gimenéz) rather than the Spanish grape. this did not diminish our enjoyment, with enough acidity to match the salad dressing, while the lemon-lime replaced the initial minerality later in the bottle. No regrets on this purchase...

Almost colorless with a bouquet and flavor mixing lemon with mineral notes. Pleasant with nice acidity and no off notes The wine label says Pedro Ximenez, but I wonder whether the variety is actually Pedo Gimenez, a very common variety in South America,and not related to the Spanish variety.

Simple but solid white. Great with fish. i paired with a blackened sea bass and was quite good. Similarities to a NZ Sauvignon Blanc but smoother.
